It’s been a little while since I’ve emailed, but I’ve been busying myself with new recipes! My latest is my Rich Chocolate Swiss Roll Cake that just went up on the blog. In this email I wanted to share my top tips for getting a crack-free Swiss Roll Cake.

How To Avoid Cracks In Your Swiss Roll Cake!
Start with the right recipe - getting the right ratio of ingredients will set you on the path to success
Measure using scales - they’re far more accurate than using cups and give you consistent results.
Spread your batter evenly - to make sure it doesn’t crack as you roll it!
Two step rolling - make sure you gently roll as soon as your cake comes out of the oven to help it retain it’s shape when rolling up again.
Use the right filling - things like buttercream, ganache and chantillly cream are perfect!

We’ve been busy growing and we can speak sentences now! We’re climbing, testing boundaries and boy do we babble when we’re sitting in the car! It’s exciting but a little sad in a way because she’s hit another leap developmental and she’s less and less like a toddler and more like a little girl who’s constantly busying herself and learning.
